Strawberry Cake & Cream Cheese Icing

Strawberry Cake  1 box white cake mix
10oz bag of frozen strawberries {thawed}
1 small package {3oz} strawberry gelatin mix
4 eggs
2/3 cup vegetable oil
1/2 cup milk


In a small bowl, use a fork and mash the strawberries. Set aside 1/2 cup of the strawberries for use in the frosting. Mix the remaining strawberries, cake mix, gelatin mix, eggs, oil and milk together in a mixing bowl and mix on medium speed for 2-3 minutes.

You can either make a layer cake or a 9x13 cake. If you choose to make a layer cake, grease and flour your cake pans. If you are making a 9x13, cooking spray will work great. Fill your pans and bake at 350 for about 20 minutes for layer cakes and 25-30 minutes for a 9x13. 

Strawberry Cream Cheese Frosting  8oz cream cheese {softened}
6 Tbsp. butter {softened}
1/2 cup of reserved mashed strawberries
1 tsp. Vanilla extract
1.5 lb. powdered sugar

In a mixer, whip the cream cheese and butter until fluffy. Add the strawberries and vanilla. Mix until completely incorporated and fluffy.   With the mixer on low, slowly add the powdered sugar. Add more or less as needed to achieve a nice spreading consistency.

Frost your cooled cake and enjoy!!

Sinful Cupcakes by Natalyn Shepherd

These cupcakes are to die for! You'll see why when you read the ingredients! Enjoy!

Cupcakes

Cream until fluffy:
1 ½ c. unsalted butter
2 c. sugar
5 eggs
            1 ½ t. vanilla
            1 ½ t. almond flavoring
Sift dry ingredients and add to creamed ingredients:
            3 c. flour
            1 t. baking soda
            ½ t. baking soda
            ½ t. salt
Stir in:
            1 c. buttermilk
            14 oz sweetened coconut
Place in foil cupcake liners. Bake at 350’ for 20-25 min.  Makes 24-26.

Butter - Cream Cheese Frosting

Cream:
            1 lb. Philadelphia cream cheese
            1 ½ c. unsalted butter
            1 t. vanilla
            ½ t. almond flavoring
            ½ lb. powdered sugar

An additional 2 oz. coconut may be colored green and sprinkled on top of frosted cupcakes.  A few jelly beans on top makes it the perfect Easter diner dessert!

Chewy Banana Nut Oatmeal Cookies

I found this recipe on the internet a few days ago and decided to try it last night. They sound delicious and let me tell you... they ARE delicious. Very good recipe. I recommend you trying!

Chocolate Chip Cookies

{Found at Greaves Goodies}
2/3 c. shortening
2/3 c. butter (not margarine)
1 c. granulated sugar
1 c. brown sugar, packed
2 eggs
2 tsp. vanilla
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 c. chopped nuts (optional)
12 oz. semi-sweet chocolate chips (I always use milk chocolate chips!)

Mix thoroughly first 6 ingredients. Stir in remaining ingredients. Drop on ungreased baking stone. Bake 8 to 10 minutes at 375 degrees. This is a single recipe which makes about 7 dozen.

Rolo Cookies

I saw this great, easy, recipe on Oops! Redone today and HAD to post!

Ingredients:
1 chocolate cake mix
2 eggs
1/2 cup oil
4 Packs of Rolos

Directions:
Mix chocolate cake mix with 2 eggs and 1/2 cup oil.
Form dough into small balls around a Rollo.
Bake at 350.
8-10 minutes.

Chocolate Fudge... Yum!

Today, Chris' aunt taught me how to make his Grandma Billie's fudge... and it's so good! I don't have exact measurements... but it's fairly simple.

Sauce pan Ingredients:
2 sticks of butter (1 cup of butter)
4 cups sugar
1 can evaporated milk
2.5 jars of marshmallow cream

Mixing bowl Ingredients:
2 big Hershey bars (the ones that have like 20 little squares)
2 bags of chocolate chips
2 hand fulls of almonds
2 hand fulls of walnuts

In a sauce pan, bring to a boil sugar, butter (not margarine), and evaporated milk. Once boiling, boil for 10 minutes while stirring. Then, check mixture to see if it's "soft ball" like. Meaning, you drop a bit of it into ice water and if it instantly forms a soft ball... it's ready!

Add 2 and 1/2 jars of marshmallow cream  (not the tall jars of cream, but the shorter ones) and the mixing bowl ingredients to the boiling mixture. Stir until it's creamy and everything is mixed in well. Then, pour into a buttered pan and let set up. It will make a few pans worth! Enjoy!

The Ever-So-Fabulous CAKE POPS

Ingredients:
1 box cake mix
1 can of ready-made frosting
1 Package of Wilton’s candy melts. (white chocolate, milk chocolate, etc.)
Cookie sheet
Wax paper
Popsicle sticks
Sprinkles, etc.

•Prep time 15 min.
•Bake time 35min
•Cool time 1 hr 30 min
•Total time: About 3 hr

Directions:
  • Bake cake and allow to cool completely (about one hour).
  • Crumble cake in large bowl and add frosting (usually 3/4 can of frosting).
  • Put cake mixture in fridge and chill for 30 min
  • Take out and shape dough into balls or press into favorite cookie cutter.
  • Dip end of Popsicle stick in candy melts and insert into cake ball. Allow to harden. This helps cake to stay on the stick.
  • When ready, dip cake pop in candy melts and dry upside down. At this point you can add decorations.

Grandma's Cheese Ball Recipe

Delicious and EASY recipe!
Makes 1 cheese ball.

Ingredients:
8 oz box of cream cheese (softened)
1 Tbsp Worchester Sauce (worschesour sauce)
Some green onions (just cut the green into little pieces... I usually use half the pack of green onions from Walmart)
Thinly sliced sandwich ham (cut into small pieces)
*Walnuts (optional)
Mix all together and eat with Ritz crackers!

*My grandmother likes to roll hers in chopped walnuts. I prefer no nuts so I don't roll them in any.

Blueberry Streusel Muffins

What I love about this recipe is you likely have everything but the blueberries! You can probably substitute the blueberries for another fruit as well. From allrecipes.com.

1 1/2 c. all-purpose flour
3/4 c. sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 egg
1/3 c. milk
1 c. blueberries

Streusel Topping
1/2 c. sugar
1/3 c. all-purpose flour
1/4 c. butter, cubed
1 1/2 tsp ground cinnamon

Preheat oven to 400F. Grease muffin tin (or line with paper liners). Combine flour, sugar, salt and baking powder.

Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries.

Fill muffin cups right to the top, and sprinkle with crumb topping mixture.

To Make Streusel Topping: Mix together sugar, flour, butter, and cinnamon. Mix with fork, and sprinkle over muffins before baking.

Bake for 20 to 25 minutes in the preheated oven, or until done.

Ravioli with Apples and Walnuts

Time: About 20 Minutes

Serves: 4

1 lbs cheese ravioli
4 tbsp olive oil, divided
1/2 c. chopped walnuts
1 crisp apple, cut into match sticks
1/4 c. fresh parsley, chopped
salt and pepper, to taste
1/4 c. grated Parmesan cheese

Cook ravioli according to the package directions.Meanwhile, heat 2 tbsp oil in a skillet. Add walnuts and cook until lightly toasted, approximately 5 minutes.Remove from heat and add apple and parsley. Season with salt and pepper and toss with walnuts. Combine with ravioli and drizzle with remaining 2 tbsp oil. Sprinkle with Parmesan cheese.

Beef Enchiladas

Another delicious and easy recipe that I took from a friend. What I love about this recipe is you can make it spicier or milder depending on the sauce you get (fire, hot, mild, etc.) and the recipe can be made smaller or larger depending on the number of people you need to serve. This recipe serves about 4 people.



Delicious Meatloaf

I have never been a fan of meatloaf, but I LOVE this meatloaf. It's absolutely delicious. I top with ketcup and leave in oven a few more minutes.
