Oatmeal Banana Cookies

This is a recipe I found off of myfitnesspal.com:

3 bananas
2c. uncooked quick cooking oats
1/4 c. raisins
1/3 c. margarine
1/4 c. 1% milk
1tsp. vanilla extract
1-2tsp of cinnimon (to taste)Directions
Combine all ingredients, beating well with hand mixer. Let stand for 5 minutes so oats will absorb moisture. Drop dough by heaping teaspoonsfuls onto greased cookie sheet. Flatten. Bake at 350 degress for 15-20 minutes let stand 1 minute on cookie sheet.

Makes about 20 "cookies."

They are interesting. They aren't sweet like cookies, but the are satisfying. :) And not bad for 80 cal a cookie!

Fettuccine Alfredo

From the kitchen of Steven Haws

1 lb fettuccine, cooked al dente
3 Tbs butter
1/4 tsp pepper
1/2 tsp garlic powder
1/2 C grated parmesean chees (alhtough I use the stuff in the bag)
1 pint heavy cream
1 1/2 tsp salt
1/8 tsp oregano
4 slices (about 1/2-3/4 C shredded) mozzerella cheese
Cook noodles. (I usually boil the water and then put the noodles in when I put in the mozzarella) Place cream and butter in large heavy pot. Add salt, pepper, oregano and garlic. Cook for 5 min. Add mozzarella and simmer for 10 minutes over low heat. Stir in noodles and mix well with grade cheese.

From the kitchen of Carolyn Myers

1 1/2 C spiral noodles
1/2 lb browned hamburger
1 can tomato soup
2 8oz cans tomato sauce
1 tsp dried onion (or fresh onion)
1/4 C milk
top with cheese

Cook pasta for 7 minutes and brown hamburger. (I usually thaw out already browned beef for a quick meal.) Put noodles and hamburger in a 13X9 glass dish. Combine tomato ingredients, onion, and milk. Pour over pasta and mix slightly. Top with cheese. Bake, covered in tin foil, for 30 minutes at 350 degrees!

I had to add our photos from making this recipe. We really enjoyed it and it's so easy to make. ---Rachelle
